Hestan cookware is engineered using high-performance materials and advanced construction, allowing it to heat quickly, evenly, and efficiently. Because of this superior heat conductivity, you'll often achieve the best results using lower heat settings than you may be accustomed to with other cookware.
As a general guide:
- Low heat: Ideal for simmering, sauces, melting butter, and delicate foods.
- Medium heat: Perfect for most everyday cooking, including sautéing, frying eggs, and cooking vegetables.
- Medium-high heat: Best for browning and searing meats, poultry, and seafood.
- High heat: Rarely required and generally only recommended for boiling water. Prolonged use of high heat can cause overheating and may affect cooking performance.
Cooking on different hob types
Induction hobs
- Induction cooking is extremely efficient and transfers energy directly into the cookware.
- Start with a lower heat setting than you might normally use and increase gradually if needed.
- For the best performance, choose an induction ring that closely matches the size of the cookware base. Using a ring that is significantly smaller than the pan may result in uneven heating.
- Avoid using the boost or power setting for extended periods, as Hestan cookware heats very quickly on induction.
Gas hobs
- Use a flame size that matches the base of the cookware.
- Flames should not extend beyond the sides of the pan, as this can cause discolouration and make the handles hotter during use.
Ceramic hobs
- Ceramic hobs take longer to heat up and cool down than induction.
- Preheat the pan gently using a medium setting and allow the cookware time to respond before increasing the temperature.
Electric solid plate hobs
- Start on a medium heat setting and adjust gradually.
- As electric plates retain heat after the setting is reduced, you may need to lower the temperature earlier than expected.
